In the midst of the exuberant Caldenses mountains, Hacienda Venecia is located, a coffee farm where for 60 years we have woven a long tradition around the aromatic coffee bean. Venecia is the result of the effort and commitment of our family. Ildefonso Echeverri, founder of the hacienda, sowed the first seeds in these fertile lands, giving origin to the extensive coffee plantations that today flourish in the mountains and enrich the Coffee Cultural Landscape of the region. Since 2002, the farm belongs to the fourth generation and is under the leadership of Juan Pablo Echeverri Londoño.
The farm is Based in Chinchina, Caldas. The farm has 220 hectares, of which 160 are planted with coffee and one hectare is destined for the cultivation of fine cacao. In its commitment to the environment, Venice has around 50 hectares for conservation, which have been regenerating and which is home to more than 250 species of native and migratory birds.The farm has teh follwing varietals planted Heirlooms EM55 (5.9 hectares), Catuai EM48 (3.59 hectares), Nespresso Hybrid (17 hectares), Castillo (115.5 hectares).
The farm has begun to experiment with coffees and micro lots and this coffee has been processed in this way. The cherry is selectively picked and sorted before then being washed and cleaned. The coffee then undergoes 48 hour fermentation in cherry.
The coffee is then taken to raised African beds and slowly dried at 32 c until the moisture reaches below 11%.
